As someone deeply immersed in the food and beverage industry, Tapasu stood out to me not just for its curated offerings but for the philosophy behind its menu—a seamless marriage of tradition and innovation, with every detail thoughtfully considered.

  • Sakoshi Bay Oysters from Hyogo Prefecture are a plump, creamy delight. Their farming process, perfected by the Ohkawa clan, includes a fascinating twist—oysters are briefly removed from the water to stimulate growth, resulting in their rich, velvety texture.

  • Kuju-ku Shima Bay Oysters from Nagasaki Prefecture strike a perfect balance between creamy and briny. Harvested by hand during peak season, these oysters are a testament to the Suetake family’s dedication to sustainable and traditional farming methods.

  • Akasaki Oysters from Iwate Prefecture are a rare treat. Grown patiently in Ofunato Bay, these large, meaty oysters embody the essence of their nutrient-rich environment, offering a light, creamy profile that lingers long after your last bite.
